  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 1 lemon (juice and zest)
  • 2 cups fresh baby spinach
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • ¼ cup shredded Parmesan cheese for garnish

Instructions

  2. Cook orzo in salted boiling water according to package instructions until al dente. Drain, reserving ½ cup of pasta water.
