  • 1 lb flank steak or sirloin
  • 1 cup jasmine rice
  • 1/2 cup fresh cilantro, chopped
  • Juice of 2 limes (about 1/4 cup)
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 cup bell peppers, sliced (mix of colors)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Marinate the steak: In a bowl, mix lime juice, minced garlic, brown sugar, salt, pepper, and chopped cilantro. Add steak and marinate for at least 30 minutes.
  2. Cook the rice: Rinse jasmine rice until water runs clear. Combine with two cups water and a pinch of salt in a pot. Bring to a boil, then cover and simmer on low for about 15 minutes until fluffy.
  3. Sauté the veggies: Heat olive oil in a skillet over medium heat. Add sliced bell peppers and sauté for about five minutes until slightly soft.
  4. Grill the steak: Preheat grill or pan over medium-high heat. Grill each side of the marinated steak for about four to six minutes until charred but juicy. Let it rest before slicing against the grain.
  5. Assemble your bowls: Start with rice as the base, layer sliced steak on top, add sautéed bell peppers, garnish with fresh cilantro, and drizzle with extra lime juice if desired.
