- 1 cup jasmine rice
- 1/2 cup fresh cilantro, chopped
- Juice of 2 limes (about 1/4 cup)
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 cup bell peppers, sliced (mix of colors)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Marinate the steak: In a bowl, mix lime juice, minced garlic, brown sugar, salt, pepper, and chopped cilantro. Add steak and marinate for at least 30 minutes.
- Cook the rice: Rinse jasmine rice until water runs clear. Combine with two cups water and a pinch of salt in a pot. Bring to a boil, then cover and simmer on low for about 15 minutes until fluffy.
- Sauté the veggies: Heat olive oil in a skillet over medium heat. Add sliced bell peppers and sauté for about five minutes until slightly soft.
- Grill the steak: Preheat grill or pan over medium-high heat. Grill each side of the marinated steak for about four to six minutes until charred but juicy. Let it rest before slicing against the grain.
- Assemble your bowls: Start with rice as the base, layer sliced steak on top, add sautéed bell peppers, garnish with fresh cilantro, and drizzle with extra lime juice if desired.
