Watermelon Jelly Dessert

Ingredients
  

Watermelon Jelly
  • 4 cups watermelon juice freshly blended
  • 1 cup water
  • 2 tablespoons gelatin powder unflavored
  • 1 tablespoon lime juice freshly squeezed
  • 2 tablespoons honey or to taste

Method
 

Prepare the Watermelon Juice
  1. Cut the watermelon into chunks and blend until smooth. Strain through a fine mesh sieve to remove pulp if desired.
Dissolve Gelatin
  1. In a small bowl, sprinkle the gelatin over 1 cup of cold water and let it sit for 5 minutes to bloom.
Combine Ingredients
  1. In a mixing bowl, combine the watermelon juice, lime juice, and honey. Stir well.
  2. Heat the bloomed gelatin in the microwave for about 15-20 seconds until dissolved, then mix it into the watermelon mixture.
Set the Jelly
  1. Pour the mixture into a jelly mold or individual serving cups. Refrigerate for at least 4 hours or until set.
Serve
  1. Once set, unmold the jelly or serve directly from the cups. Garnish with mint leaves if desired.

Notes
