Dressing
  • 3 tablespoons olive oil extra virgin
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

Prepare the Salad
  1. In a mixing bowl, combine the halved cherry tomatoes, diced cucumber, cubed mozzarella, and chopped basil.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper.
  3. Pour the dressing over the salad and toss gently to combine.
