  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup fresh mint chopped
Dressing
  • 3 tablespoons lime juice freshly squeezed
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar or to taste
  • 1 teaspoon chili flakes or to taste

Method
 

Prepare the Salad
  1. In a mixing bowl, combine the sliced cucumbers, cherry tomatoes, red onion, cilantro, and mint.
Make the Dressing
  1. In a small bowl, whisk together the lime juice, fish sauce, sugar, and chili flakes until well combined.
Combine and Serve
