Preparation
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add in the vanilla extract and mix well.
- Gradually add the sifted flour and salt, mixing until just combined.
- Fold in the chopped strawberries gently.
Baking
- Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
- Flatten each cookie slightly with the back of a spatula.
- Bake in the preheated oven for 15-20 minutes or until the edges are lightly golden.
- Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
