Ingredients
  

Cookies
  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour sifted
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries chopped

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add in the vanilla extract and mix well.
  4. Gradually add the sifted flour and salt, mixing until just combined.
  5. Fold in the chopped strawberries gently.
Baking
  1. Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
  2. Flatten each cookie slightly with the back of a spatula.
  3. Bake in the preheated oven for 15-20 minutes or until the edges are lightly golden.
  4. Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
