Method
Prepare the Filling
- In a mixing bowl, combine the softened cream cheese, granulated sugar, vanilla extract, and one egg yolk. Mix until smooth and creamy.
Prepare the Strawberries
- In a separate bowl, toss the sliced strawberries with granulated sugar and let them sit for about 10 minutes to release their juices.
Assemble the Danish
- Preheat the oven to 375°F (190°C). Roll out the puff pastry on a floured surface and cut into squares.
- Place a spoonful of the cream cheese filling in the center of each pastry square, then top with a few slices of macerated strawberries.
- Fold the corners of the pastry over the filling to create a diamond shape and pinch to seal.
- Brush the tops with the beaten egg for a golden finish.
Bake
- Place the pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
