Ingredients
  

For the Salmon
  • 4 fillets salmon skinless
  • 3 tablespoons Sriracha
  • 2 tablespoons honey
  • 1 tablespoon soy sauce low sodium
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger minced
For the Bowls
  • 2 cups cooked rice white or brown
  • 1 cup cucumber sliced
  • 1 cup carrots shredded
  • 1 cup edamame shelled
  • 1 tablespoon sesame seeds for garnish
  • 2 green onions sliced for garnish

Method
 

Prepare the Salmon
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, whisk together Sriracha, honey, soy sauce, garlic, and ginger.
  3. Place salmon fillets on a baking sheet and brush with the Sriracha honey mixture.
  4. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Assemble the Bowls
  1. In serving bowls, divide the cooked rice evenly.
  2. Top each bowl with sliced cucumber, shredded carrots, and edamame.
  3. Place a salmon fillet on top of each bowl.
  4. Garnish with sesame seeds and sliced green onions.
