Ingredients
  

Potatoes
  • 2 pounds Yukon Gold potatoes peeled and diced
Bacon
  • 6 slices bacon cooked and crumbled
Dressing
  • 1 cup ranch dressing
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dijon mustard
Vegetables
  • 1 cup celery diced
  • 1 cup green onions sliced
Seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare Potatoes
  1. In a large pot, bring salted water to a boil. Add the diced potatoes and cook until tender, about 15-20 minutes. Drain and let cool.
Mix Ingredients
  1. In a mixing bowl, combine the cooled potatoes, crumbled bacon, diced celery, and sliced green onions.
  2. In a separate bowl, whisk together the ranch dressing, apple cider vinegar, dijon mustard, salt, and black pepper.
  3. Pour the dressing over the potato mixture and gently stir to combine.
Chill and Serve
  1. Cover the salad and refrigerate for at least 30 minutes before serving to allow flavors to meld.
