  • 1 pound asparagus trimmed
  • 2 tablespoons olive oil extra virgin
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
  • 1 lemon lemon zested and juiced

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, toss the trimmed asparagus with olive oil, salt, and black pepper until evenly coated.
Roasting
  1. Spread the asparagus in a single layer on a baking sheet.
  2. Roast in the preheated oven for 12-15 minutes, or until tender and slightly crispy.
  3. Remove from the oven and drizzle with lemon juice and zest before serving.
