Method
Prepare Rice
- Soak the rinsed rice in 2 cups of water for at least 3 hours or overnight.
Blend Ingredients
- In a blender, combine the soaked rice (with soaking water), remaining 3 cups of water, milk, sugar, vanilla extract, ground cinnamon, and salt.
- Blend until smooth.
Strain Mixture
- Strain the blended mixture through a fine mesh strainer or cheesecloth into a large bowl or pitcher.
- Press down to extract as much liquid as possible.
Serve
- Chill the horchata in the refrigerator for at least 30 minutes before serving.
- Serve over ice and sprinkle with additional cinnamon if desired.
