Horchata

A refreshing Mexican beverage made from rice, milk, vanilla, and cinnamon, perfect for hot days.

Ingredients
  

Base Ingredients
  • 1 cup long-grain white rice rinsed and drained
  • 5 cups water
  • 1 cup milk can use almond or coconut milk for a dairy-free version
  • 1/2 cup sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon plus extra for garnish
  • 1/4 teaspoon salt

Method
 

Prepare Rice
  1. Soak the rinsed rice in 2 cups of water for at least 3 hours or overnight.
Blend Ingredients
  1. In a blender, combine the soaked rice (with soaking water), remaining 3 cups of water, milk, sugar, vanilla extract, ground cinnamon, and salt.
  2. Blend until smooth.
Strain Mixture
  1. Strain the blended mixture through a fine mesh strainer or cheesecloth into a large bowl or pitcher.
  2. Press down to extract as much liquid as possible.
Serve
  1. Chill the horchata in the refrigerator for at least 30 minutes before serving.
  2. Serve over ice and sprinkle with additional cinnamon if desired.

Notes

Horchata can be stored in the refrigerator for up to 5 days. Shake well before serving as ingredients may settle.
