Ingredients
  

For the Beef Mixture
  • 1 lb ground beef use lean beef or substitute with turkey
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 medium bell pepper diced
For the Greek Flavoring
  • 1 tbsp oregano dried or fresh
  • 1 tsp cumin
  • 4 oz feta cheese crumbled
For the Vegetables
  • 1 medium zucchini sliced
  • 1 cup cherry tomatoes halved

Method
 

Cooking Steps
  1. Preheat a large skillet over medium-high heat. Add a splash of olive oil.
  2. Add ground beef to the hot skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes, and drain excess fat.
  3. Stir in diced onions and minced garlic, cooking until onions are translucent, about 3-4 minutes.
  4. Sprinkle in dried oregano, cumin, and paprika. Mix well and let them toast for about 1 minute.
  5. Pour in canned diced tomatoes along with their juices, stirring everything together. Simmer for 10 minutes on low heat.
  6. Gently mix crumbled feta cheese into the skillet just before serving.
