Ingredients
  

Crawfish and Vegetables
  • 3 pounds live crawfish cleaned
  • 2 ears corn cut in half
  • 1 pound small red potatoes washed
  • 1 pound andouille sausage sliced
  • 1 tablespoon cayenne pepper
  • 1 tablespoon Old Bay seasoning
  • 1 lemon cut into wedges
  • 4 cloves garlic smashed
  • 1 bunch fresh parsley for garnish

Method
 

Prepare the Boil
  1. Fill a large pot with water and bring it to a boil.
  2. Add the potatoes, corn, sausage, garlic, cayenne pepper, and Old Bay seasoning to the boiling water.
  3. Boil for about 15-20 minutes or until the potatoes are tender.
Add the Crawfish
  1. Add the cleaned crawfish to the pot and stir well.
  2. Boil for an additional 3-5 minutes until the crawfish are bright red.
Serve
  1. Turn off the heat and let the pot sit for 5 minutes.
  2. Drain the mixture using a strainer and transfer to a large serving platter.
  3. Garnish with lemon wedges and parsley before serving.
