Preparation
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine olive oil, salt, black pepper, garlic powder, and paprika.
- Add the chicken thighs to the bowl and coat them well with the seasoning mixture.
- Place the seasoned chicken thighs on a baking sheet.
- In the same bowl, add the Brussels sprouts and toss them in the remaining seasoning mixture.
- Arrange the Brussels sprouts around the chicken on the baking sheet.
Cooking
- Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the Brussels sprouts are tender and caramelized.
- Check the internal temperature of the chicken; it should reach 165°F (75°C).
- Remove from the oven and let rest for a few minutes before serving.
