Cooking Instructions
  1. Preheat the Blackstone griddle over medium heat.
  2. Add the bacon slices to the griddle and cook until crispy, about 5-7 minutes.
  3. Remove the bacon and set aside, leaving the drippings on the griddle.
  4. Add olive oil to the griddle, then add diced bell peppers and onions. Sauté until softened, about 3-4 minutes.
  5. Crack the eggs onto the griddle and season with salt and pepper. Cook to your desired doneness, about 3-5 minutes.
  6. Serve the eggs with bacon and sautéed vegetables.
