Blackened Shrimp Pasta

Ingredients
  

For the Blackened Shrimp
  • 1 lb large shrimp peeled and deveined
  • 2 tbsp blackening seasoning
  • 2 tbsp olive oil for cooking
For the Pasta
  • 12 oz fettuccine or pasta of choice
  • 1 cup heavy cream
  • 1 cup parmesan cheese grated
  • 2 cloves garlic minced
  • 1 tbsp butter
  • 1 cup spinach fresh
  • salt to taste
  • pepper to taste

Method
 

Prepare the Shrimp
  1. In a mixing bowl, toss the shrimp with blackening seasoning until evenly coated.
  2. Heat olive oil in a skillet over medium-high heat and add the shrimp.
  3. Cook for 2-3 minutes on each side until blackened and cooked through. Remove from skillet and set aside.
Cook the Pasta
  1. In a pot, bring salted water to a boil and cook the fettuccine according to package instructions. Drain and set aside.
Make the Sauce
  1. In the same skillet, melt butter and sauté garlic until fragrant.
  2. Add heavy cream and bring to a simmer. Stir in parmesan cheese until melted and smooth.
  3. Add spinach and cook until wilted. Season with salt and pepper to taste.
Combine
  1. Add the cooked fettuccine and blackened shrimp to the sauce, tossing to coat evenly.
  2. Serve immediately, garnished with additional parmesan if desired.

Notes

For a spicier kick, add cayenne pepper to the blackening seasoning.
