Method
Prepare the Shrimp
- In a mixing bowl, toss the shrimp with blackening seasoning until evenly coated.
- Heat olive oil in a skillet over medium-high heat and add the shrimp.
- Cook for 2-3 minutes on each side until blackened and cooked through. Remove from skillet and set aside.
Cook the Pasta
- In a pot, bring salted water to a boil and cook the fettuccine according to package instructions. Drain and set aside.
Make the Sauce
- In the same skillet, melt butter and sauté garlic until fragrant.
- Add heavy cream and bring to a simmer. Stir in parmesan cheese until melted and smooth.
- Add spinach and cook until wilted. Season with salt and pepper to taste.
Combine
- Add the cooked fettuccine and blackened shrimp to the sauce, tossing to coat evenly.
- Serve immediately, garnished with additional parmesan if desired.
