  • 2 ripe Avocados Choose ones that yield slightly to pressure.
  • 2 Eggs Can substitute with flaxseed meal mixed with water for a vegan option.
  • 1 cup All-purpose flour Whole wheat flour can be used for a nuttier flavor.
Optional Add-ins
  • 1 pinch Salt Enhances the flavor.
  • 1 teaspoon Baking powder Adds lift to your avocado bread.

Method
 

Preparation
  1. Slice ripe avocados in half and remove the pits. Scoop the creamy flesh into a mixing bowl.
  2. Mash the avocados with a fork until smooth and buttery, about 2-3 minutes.
  3. Add eggs and flour (and optional ingredients) to the mashed avocados and stir until well combined.
  4. Preheat the oven to 350°F (175°C). Place the mixture on slices of bread and toast for 10-12 minutes until golden brown.
  5. Remove from the oven, let cool for a minute, then slice and serve warm.
