Instructions
- Cook the orzo in salted boiling water until al dente (about 8–10 minutes). Drain and rinse under cold water.
- While the orzo cooks, chop the cherry tomatoes, cucumber, red onion, and parsley.
- In a large bowl, combine cooked orzo with chopped vegetables, olives, and feta cheese. Toss gently to mix.
- In a small bowl or jar, whisk together lemon juice and olive oil; drizzle over the salad.
