  • 3 cups boneless, skinless chicken breasts (about 34 pieces)
  • 2 medium carrots, peeled and sliced
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 4 cups low-sodium chicken broth
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup whole milk
  • 4 tablespoons butter, melted
  • Salt and pepper to taste

Instructions

  1. Chop chicken into bite-sized pieces. In a large pot over medium heat, add oil and sauté until browned. Remove from pot.
  2. In the same pot, add diced onions, carrots, and celery. Cook for about five minutes until softened.
  3. Pour in chicken broth and bring to a boil. Add cooked chicken along with salt, pepper, and thyme; stir well.
  4. In a separate bowl, mix flour, baking powder, milk, and melted butter until just combined.
  5. Drop spoonfuls of dumpling dough into the boiling broth. Cover tightly and simmer for about fifteen minutes without lifting the lid.
  6. Serve hot with extra broth if desired.
