- 1 lb lean ground beef
- 4 medium Yukon Gold potatoes, sliced
- 2 cups shredded sharp cheddar cheese
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup low-sodium beef broth
- Salt & pepper to taste
- 1 tsp dried thyme
Instructions
- Preheat oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
- In a skillet over medium heat, sauté diced onion and minced garlic until golden brown (about 5 minutes).
- Add ground beef to the skillet; cook until browned while breaking it apart (about 7 minutes).
- Stir in beef broth, salt, pepper, and dried herbs; let simmer for 5 minutes.
- Layer half of the sliced potatoes at the bottom of the baking dish. Spoon half of the beef mixture over them and sprinkle with half of the shredded cheese. Repeat layers.
- Cover with foil and bake for about 45 minutes. Remove foil during the last 10 minutes to allow cheese to bubble.
