  • 2 cups fresh broccoli florets
  • 1 cup uncooked long-grain white rice
  • 2 cups sharp cheddar cheese, grated (divided)
  • 2 cups low-sodium chicken broth
  • 1 cup sour cream (or Greek yogurt)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup panko breadcrumbs

Instructions

  1. Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Blanch the broccoli in boiling water for 2 minutes, then drain and set aside.
  3. Sauté the onion and garlic in olive oil over medium heat for about 5 minutes until soft.
  4. In a large bowl, combine uncooked rice, sautéed onion and garlic, blanched broccoli, chicken broth, sour cream, and half of the cheddar cheese. Mix well.
  5. Transfer the mixture to the prepared baking dish, top with remaining cheese and panko breadcrumbs.
  6. Bake for 30-35 minutes until bubbly and golden brown. Allow to cool slightly before serving.
