  • 4 medium zucchinis
  • 1 lb lean ground beef (80/20)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly coat a baking dish with nonstick spray.
  2. Halve the zucchinis lengthwise and scoop out the seeds. Place cut-side up in the baking dish.
  3. In a skillet over medium heat, cook the ground beef and diced onion until browned (5-7 minutes). Add minced garlic and Italian seasoning, cooking for an additional minute.
  4. Stir half of the cheese into the beef mixture, then fill each zucchini half generously with this mixture.
  5. Top with remaining cheese, cover with foil, and bake for 25-30 minutes until tender but not mushy.
