  • 1 pound ribeye or sirloin steak
  • 1 pound baby potatoes, halved
  • 6 garlic cloves, minced
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons fresh rosemary, chopped (or thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss halved baby potatoes with 2 tablespoons olive oil, salt, pepper, and rosemary until well coated.
  3. Spread the seasoned potatoes on the baking sheet in a single layer and roast for 25-30 minutes until golden brown.
  4. While potatoes roast, season the steak with salt, pepper, minced garlic, and drizzle with remaining olive oil. Let it rest for 10 minutes.
  5. Heat a skillet over medium-high heat with olive oil. Sear the steak for about 4-5 minutes on each side for medium-rare doneness.
  6. Remove both steak and potatoes from heat and let them rest for 5 minutes before slicing. Serve warm.
