  • 8 oz rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced (preferably English)
  • 1 cup bell peppers, diced (red or yellow)
  • ½ cup red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • ½ cup Italian dressing

Instructions

  1. Boil salted water in a large pot. Add rotini or penne and cook according to package instructions until al dente. Drain and rinse under cold water.
  2. Chop the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces. Mix in a large bowl.
  3. Add cooled pasta to the vegetables and sprinkle crumbled feta over the top.
  4. Pour Italian dressing over the mixture and stir gently until all ingredients are coated.
