Ingredients

  • 2 cups cucumbers, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and slice the cucumbers into thin rounds or half-moons. Halve the cherry tomatoes.
  2. Thinly slice the red onion and soak in cold water for a few minutes if desired.
  3. In a large bowl, combine cucumbers, cherry tomatoes, red onion, feta cheese, and parsley.
  4. In a separate small bowl, whisk together olive oil and lemon juice. Drizzle over the salad and toss gently.
