  • 4 cups English cucumbers, thinly sliced
  • 1/4 cup rice vinegar
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sugar (adjust to taste)
  • 1 tsp sesame oil
  • 2 green onions, finely chopped
  • 1 tbsp toasted sesame seeds

Instructions

  1. Wash and thinly slice the cucumbers using a knife or mandoline slicer.
  2. Place sliced cucumbers in a colander, sprinkle with salt, and let sit for about 15 minutes to remove excess moisture.
  3. In a medium bowl, whisk together rice vinegar, soy sauce, sugar, and sesame oil until well combined.
  4. Rinse the cucumbers under cold water to remove excess salt and pat dry with paper towels. Toss them in the dressing along with the chopped green onions.
  5. Just before serving, sprinkle toasted sesame seeds over the top for added crunch.
