  • 4 cups low-sodium chicken broth
  • 2 cups chopped fresh vegetables (carrots, celery, spinach)
  • 1 lb boneless chicken thighs
  • 4 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1-inch piece fresh ginger, sliced thinly
  • 1 tbsp sesame oil

Instructions

  1. In a large pot over medium heat, sauté minced garlic and sliced ginger in olive oil for 2 minutes until fragrant.
  2. Add boneless chicken thighs and brown on both sides for about 5 minutes.
  3. Stir in chopped carrots and celery; cook for an additional 5 minutes.
  4. Pour in the chicken broth and soy sauce; bring to a boil then reduce heat to simmer for 20 minutes.
  5. Mix in fresh spinach during the last 5 minutes of cooking.
  6. Serve hot with a drizzle of sesame oil on top.
