  • 8 rice paper wrappers
  • 1 cup julienned carrots
  • 1 cup julienned cucumbers
  • ½ cup fresh mint leaves
  • ½ cup fresh cilantro leaves
  • ½ cup peanut sauce (store-bought or homemade)
  • 2 tablespoons low-sodium soy sauce (for dipping)

Instructions

  1. Cook the chicken by boiling or grilling until fully cooked (15-20 minutes). Allow it to cool, then shred.
  2. Julienne the carrots and cucumbers into thin strips.
  3. Soften each rice paper wrapper in warm water for about 10-15 seconds; lay flat on a clean surface.
  4. On each wrapper, place a small amount of shredded chicken, followed by veggies and herbs. Fold the sides in and roll tightly like a burrito.
  5. Mix peanut sauce with soy sauce for dipping.
