  • 2 cups finely chopped portobello mushrooms
  • 1 cup cooked quinoa
  • 1/2 cup rolled oats
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1/4 cup fresh herbs (parsley or cilantro), chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté chopped mushrooms and minced garlic in olive oil over medium heat until golden brown (about 5 minutes). Let cool.
  3. In a bowl, combine cooked quinoa, sautéed mushrooms, rolled oats, soy sauce, chopped herbs, salt, and pepper. Mix until well combined.
  4. Form the mixture into patties (about half an inch thick).
  5. Place patties on a parchment-lined baking sheet and bake for 25 minutes or until golden brown.
