- 1 lb lean ground beef
- 1 oz taco seasoning
- 1 cup shredded cheddar cheese
- ½ cup sour cream

Instructions
- Preheat your oven to 400°F (200°C). Wash and pierce each russet potato with a fork.
- Bake the potatoes directly on the oven rack or on a foil-lined baking sheet for 45-60 minutes until tender.
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and stir in taco seasoning with water as per package instructions.
- Once cooked, remove the beef from heat. Slice open baked potatoes lengthwise and fluff the insides with a fork.
- Fill each potato with seasoned beef and top with shredded cheddar cheese.
- Return to the oven for an additional 5-10 minutes until cheese melts. Serve hot topped with sour cream and fresh veggies.
