- 4 cups grated zucchini (about 3 medium zucchinis)
- 1 cup chopped sweet onion
- 1 cup chopped bell peppers (red or yellow)
- 2 cups apple cider vinegar
- 2 cups granulated sugar
- 1 tbsp mustard seeds
- 1 tbsp celery seeds
- 1 tsp salt
Instructions
- Rinse zucchinis, trim ends, and grate using a box grater or food processor. Chop onion and bell peppers into small pieces.
- In a large bowl, combine grated zucchini, chopped onions, bell peppers, and salt. Let sit for 1 hour to draw out moisture.
- Rinse the mixture under cold water to remove excess salt and drain well.
- In a large pot over medium heat, mix the drained vegetables with apple cider vinegar, sugar, mustard seeds, celery seeds, and any additional spices. Bring to a simmer while stirring occasionally for about 10–15 minutes until thickened.
- Ladle the hot mixture into sterilized jars and seal tightly. Allow to cool at room temperature before refrigerating.
