- 1 tablespoon gelatin powder
- 2 tablespoons cold water
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl. Press into a tart pan and bake for 10 minutes. Let cool.
- Blend strawberries, ½ cup sugar, and lemon juice until smooth.
- In a mixing bowl, whip heavy cream until soft peaks form. Fold in remaining sugar and strawberry puree.
- Bloom gelatin in cold water for 5 minutes; then dissolve gently in the microwave. Mix into remaining strawberry puree.
- Fold gelatin mixture into whipped cream until well combined. Spoon into cooled crust and refrigerate for at least 4 hours.
- Garnish with additional strawberries before serving.
