Ingredients

Scale
  • 4 cups banana peppers, chopped (about 810 peppers)
  • 1 medium onion, chopped (about 1 cup)
  • 1 cup apple cider vinegar
  • 3/4 cup granulated sugar
  • 1 tsp kosher salt
  • 1/2 tsp garlic powder

Instructions

  1. Wash banana peppers under cold water. Slice off the tops and remove seeds if desired. Chop into 1/2-inch pieces.
  2. Peel and chop the onion into similar-sized pieces.
  3. In a large bowl, mix the chopped banana peppers and onions. Add vinegar, sugar, salt, and garlic powder; stir until combined.
  4. Transfer the mixture to a saucepan over medium heat. Bring to a gentle boil while stirring occasionally; simmer for about 10-15 minutes until softened.
  5. Ladle hot relish into sterilized jars and seal tightly.
  6. Cool at room temperature before refrigerating. For best flavor, let it sit for a day or two.
