  • 1 cup diced fresh bell peppers (any color)
  • 8 oz cream cheese
  • 2 cups shredded sharp cheddar cheese
  • 2 cups low-sodium chicken broth
  • 14.5 oz canned diced tomatoes (no added sugar)
  • 23 tbsp hot sauce (to taste)

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Cook spaghetti in salted boiling water until al dente; drain and set aside.
  3. Sauté seasoned chicken breasts in a skillet over medium heat until browned and cooked through (about 6 minutes per side). Shred the chicken once cooled.
  4. In the same skillet, combine diced tomatoes, chicken broth, and hot sauce; stir in cream cheese until melted and smooth.
  5. In a large bowl, mix shredded chicken with cooked pasta, sauce mixture, chopped bell peppers, and half of the cheddar cheese.
  6. Transfer to the prepared baking dish, top with remaining cheddar cheese, and bake for 25-30 minutes until bubbly and golden.
