  • 1 cup cooked shredded chicken
  • 1 cup canned black beans (drained and rinsed)
  • 1 cup frozen corn
  • 3 green onions (chopped)
  • 1 cup shredded cheddar cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • Cooking spray or olive oil for brushing
  • ½ cup sour cream
  • ½ cup salsa

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together chicken, black beans, corn, green onions, cheddar cheese, cumin, and chili powder until well combined.
  3. Place about 2 tablespoons of filling in the center of each egg roll wrapper. Fold in the sides and roll tightly from the bottom.
  4. Arrange seam-side down on the baking sheet; lightly brush with oil for crispiness.
  5. Bake for about 20 minutes or until golden brown and crispy.
  6. While baking, combine sour cream and salsa in a small bowl for dipping.
  7. Serve warm with dipping sauce.
