Ingredients

  • 1 lb fresh carrots, peeled and cut into sticks
  • 1 head garlic
  • 2 tbsp olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the carrots into uniform sticks.
  3. Slice off the top of the garlic head, drizzle with olive oil, sprinkle with salt, wrap in foil, and place in the oven.
  4. Toss carrot sticks with olive oil, salt, and pepper in a large bowl.
  5. Spread the carrots on a lined baking sheet and roast for 25-30 minutes until tender and caramelized.
  6. Remove from the oven, mash roasted garlic into a bowl, mix with Parmesan cheese, then combine with carrots before serving.
