  • 2 tbsp toasted sesame oil
  • 1 cup basmati rice
  • 2 cups low-sodium chicken broth
  • 2 green onions, chopped

Instructions

  1. Marinate the chicken: In a bowl, combine pomegranate juice, soy sauce, ginger, and sesame oil. Add chicken and let marinate for at least 20 minutes.
  2. Cook the chicken: Heat a skillet over medium-high heat with a splash of sesame oil. Remove chicken from marinade (reserve liquid) and cook for about 5 minutes per side until golden brown and cooked through.
  3. Make the sauce: In the same skillet, add reserved marinade and simmer for about 5 minutes until slightly thickened.
  4. Prepare the rice pilaf: Rinse basmati rice under cold water. In another saucepan, heat olive oil over medium heat, then stir in rice until fragrant. Add chicken broth and bring to a boil; cover and reduce heat to low for about 15 minutes until fluffy.
