Ingredients
- 3 large pomegranates (about 2 cups of seeds)
- 1 cup granulated sugar
- 2 tablespoons fresh lemon juice
- 1/2 cup water

- Cut the pomegranates in half and extract the seeds (arils) by tapping the back with a wooden spoon over a bowl.
- Place seeds in a saucepan with water and simmer on medium heat for about 10-15 minutes to release juices.
- Strain the mixture through a fine mesh sieve, pressing down to extract as much juice as possible.
- In the same saucepan, combine the pomegranate juice, sugar, and lemon juice; stir well.
- Bring to a boil over medium-high heat, then reduce to medium-low and simmer for 20-30 minutes until thickened.
- Pour hot jam into sterilized jars, seal tightly, and let cool at room temperature before refrigerating.
