  • 4 slices thick sourdough or ciabatta bread
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded fresh mozzarella cheese
  • ¼ cup pizza sauce
  • 8 slices pepperoni (optional)
  • 2 tablespoons butter

Instructions

  1. Gather all ingredients.
  2. Preheat a skillet over medium heat.
  3. Butter one side of each slice of bread. On the unbuttered side of one slice, layer ½ cup cheddar, ½ cup mozzarella, pepperoni (if using), and a spoonful of pizza sauce before topping with another slice of bread (buttered side out).
  4. Place the sandwich in the skillet and cook until golden brown (3-4 minutes). Flip carefully and cook until both sides are crispy.
