  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz fusilli or rotini pasta
  • 4 cups chopped fresh romaine lettuce
  • ½ cup pesto sauce
  • ½ cup grated Parmesan cheese
  • ¼ cup Caesar dressing
  • 1 cup cherry tomatoes (halved)

Instructions

  1. Cook the pasta in boiling salted water according to package instructions until al dente. Drain and set aside.
  2. Season chicken breasts with salt and pepper. In a skillet over medium-high heat, cook chicken in olive oil for 6-7 minutes per side until golden brown and cooked through. Let it rest before slicing into bite-sized pieces.
  3. In a large bowl, combine cooked pasta, sliced chicken, chopped romaine lettuce, halved cherry tomatoes, and pesto sauce. Toss well to coat.
