  • 4 boneless, skinless chicken breasts (approx. 1.5 lbs)
  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh thyme
  • 2 medium zucchini, sliced into rounds
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Season chicken breasts with salt and pepper. In a bowl, mix Parmesan cheese, panko breadcrumbs, parsley, thyme, and additional spices if desired.
  3. Dredge each chicken breast in the breadcrumb mixture until fully coated.
