Description

  • 1 lb lean ground beef
  • 1/2 cup panko breadcrumbs
  • 1 large egg, beaten
  • 3 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce (divided)
  • 1/4 cup brown sugar
  • 1 tbsp rice vinegar
  • Water as needed

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine ground beef, breadcrumbs, egg, garlic, and half of the soy sauce. Mix gently until combined.
  3. Shape mixture into golf ball-sized meatballs and place on a lined baking sheet.
  4. Bake for 20 minutes until golden brown.
  5. For the sauce, whisk remaining soy sauce, brown sugar, rice vinegar, and a little water in a saucepan over medium heat until slightly thickened.
  6. Toss baked meatballs in the sauce until evenly coated and serve.
