- 1 lb lean ground beef
- 1/2 cup panko breadcrumbs
- 1 large egg, beaten
- 3 cloves garlic, minced
- 1/4 cup low-sodium soy sauce (divided)
- 1/4 cup brown sugar
- 1 tbsp rice vinegar
- Water as needed
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine ground beef, breadcrumbs, egg, garlic, and half of the soy sauce. Mix gently until combined.
- Shape mixture into golf ball-sized meatballs and place on a lined baking sheet.
- Bake for 20 minutes until golden brown.
- For the sauce, whisk remaining soy sauce, brown sugar, rice vinegar, and a little water in a saucepan over medium heat until slightly thickened.
- Toss baked meatballs in the sauce until evenly coated and serve.
