  • 2 cups fresh spinach
  • 2 large eggs
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika

Instructions

  1. Heat olive oil in a large saucepan over medium heat. Add chopped onions and diced carrots; sauté for about 5 minutes until softened.
  2. Stir in minced garlic, cumin, and paprika; cook for an additional minute.
  3. Add lentils and crushed tomatoes; stir well to combine.
  4. Pour in vegetable broth and bring to a gentle simmer. Cover and cook for about 25 minutes until lentils are tender.
  5. Stir in fresh spinach until wilted.
  6. For the poached eggs, bring water to a simmer in a separate pot. Crack each egg into a bowl and gently slide into the water; cook for about 3 minutes until whites are set but yolks remain runny.
