  • 1/2 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 1 large carrot, diced
  • 2 stalks celery, chopped
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups low-sodium beef broth
  • Salt and pepper to taste
  • 1 large egg

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, half of the parsley, salt, pepper, and egg. Mix well and form into one-inch meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown meatballs on all sides (about 5 minutes), then remove and set aside.
  3. In the same pot, sauté diced carrots and celery for 5-7 minutes until softened.
  4. Add beef broth and diced tomatoes; bring to a gentle boil.
  5. Return meatballs to the pot; simmer for 20 minutes to meld flavors.
  6. Serve hot in bowls, garnished with remaining parsley.
