  • 1 lb lean ground beef
  • 1 cup sweet corn (fresh or frozen)
  • 2 cups shredded sharp cheddar cheese
  • 1 oz ranch dressing mix (1 packet)
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook rotini pasta in salted boiling water for 8-10 minutes until al dente. Drain and set aside.
  3. In a large skillet over medium heat, brown the ground beef for about 5-7 minutes, breaking it apart as it cooks. Drain excess fat if necessary.
  4. Stir in sweet corn and reduce heat to low. In a separate bowl, whisk together milk and ranch dressing mix until smooth; pour over beef and corn mixture, stirring well.
  5. Add half of the cheddar cheese to the skillet, stirring until melted. Mix in the cooked rotini pasta until well combined.
  6. Transfer everything into a greased baking dish and top with remaining cheddar cheese.
  7. Cover with foil and bake for 20 minutes; remove foil and bake an additional 10 minutes until bubbly and golden brown.
