  • 2 cups all-purpose flour
  • 1 cup ground almonds
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 1/2 cup raspberry jam
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together the flour and ground almonds; set aside.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Mix in the egg yolk and vanilla extract until fully combined.
  5. Gradually add the dry mixture to the creamed mixture, stirring gently until just combined.
  6. Divide the dough into two portions, roll each out to about 1/4 inch thick, and cut into heart shapes with cookie cutters.
  7. Bake on prepared sheets for 10-12 minutes or until lightly golden around the edges.
  8. Allow cookies to cool completely before spreading raspberry jam on solid hearts and topping with cut-out hearts dusted with powdered sugar.
