Ingredients
- 2 cups sushi rice
- 3 tbsp rice vinegar
- 8 oz crab sticks (imitation crab)
- 3 tbsp mayonnaise (preferably Kewpie)
- 2 tsp Sriracha sauce (adjust to taste)
- 4 nori sheets
- 1 ripe avocado, thinly sliced
- Soy sauce (for serving)
- Pickled ginger (for serving)
Instructions
- Rinse sushi rice under cold water until clear. Cook according to package directions and mix in rice vinegar while warm.
- Shred crab sticks into small pieces and combine with mayonnaise and Sriracha in a bowl.
- Lay a nori sheet on a bamboo mat, shiny side down. Wet hands to prevent sticking, then spread about 1/2 cup of sushi rice evenly over the nori, leaving a 1-inch edge at the top.
- Add a line of spicy crab filling horizontally across the center of the rice, along with avocado slices.
- Carefully roll the sushi away from you using the bamboo mat, sealing the edge with a bit of water.
- Slice the roll into bite-sized pieces using a sharp knife and serve with soy sauce and pickled ginger.
