- 1/2 cup breadcrumbs
- 1 large egg
- 2 tsp garlic powder
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 cups long grain white rice
- 3 cups low-sodium chicken broth
Instructions
- Preheat your oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
- In a bowl, mix the ground beef, breadcrumbs, egg, garlic powder, salt, and pepper until just combined. Form into golf ball-sized meatballs.
- Whisk together honey, soy sauce, and minced garlic in a small bowl.
- Place meatballs in the baking dish and pour half of the sauce over them. Add rice around the meatballs and pour chicken broth on top.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the meatballs are golden brown.
