  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 4 sheets nori
  • 8 ounces sushi-grade fish (like tuna or salmon)
  • 1 medium cucumber, sliced into thin strips
  • 1 ripe avocado, sliced
  • 1/4 cup low-sodium soy sauce (for dipping)

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions (about 20 minutes) and let cool slightly.
  2. Combine warm rice with rice vinegar, sugar, and salt in a bowl. Fold gently to season.
  3. Slice the fish, cucumber, and avocado into long strips while the rice cools.
  4. Place a nori sheet on a bamboo mat; wet your hands and spread an even layer of rice over it, leaving an inch at the top.
  5. Lay fillings horizontally across the center of the rice and roll tightly using the bamboo mat.
  6. Slice with a sharp knife and serve with soy sauce.
