- 8 oz lo mein noodles
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1 cup snap peas
- 4 cloves garlic, minced
- 1 tsp fresh ginger, grated
- ¼ cup low-sodium soy sauce
- 2 tbsp oyster sauce
- 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
- Slice chicken breasts into thin strips. Chop vegetables into bite-sized pieces.
- Heat a large skillet or wok over medium-high heat with a splash of oil. Stir-fry chicken until golden brown and cooked through (about 5 minutes). Remove from pan.
- In the same pan, add garlic and ginger; sauté until fragrant. Add bell peppers, carrots, and snap peas; stir-fry until tender-crisp (about 3 minutes).
- Cook lo mein noodles according to package instructions; drain well.
- Prepare the sauce by whisking together soy sauce, oyster sauce, and cornstarch mixture. Pour over vegetables and chicken in the skillet; toss to combine.
- Add cooked lo mein noodles to the skillet; mix until well combined. Serve hot.
